Yes all the major bookies cash out or they would not be in business. Cashing out with Bitcoin is fast and within hours on most big name books.

I have heard before BetMGM are unusually generous with live cash our offers, but I don't think you will keep them very long if you actually take advantage.

I don't think any book offers fair cashout odds based on what you would get simply betting the other side

Yeah cashout during a game is not good idea, you should just bet on the other side on a different book to guarantee a profit. That is what I do.
