You don't lay (=have sex) with a horse, you lay it (=bet against it).
I agree whoever used this terminology "lay" should have chosen a different word but English is a tricky language, we all know that.

He lost, and I didn't bet against it ... it's so hard psychologically to do that.
Ask me to lay a tennis match 4.00 odds against a player - no problem, but with horses it's different.
