Lot of variables. But generally speaking, tips go down as the stakes go up.

Back when I lived in Florida before they got table games and poker limits were $2 a bet, the best dealers there probably made close to 100k a year.

Some dealers better than others so make better tips (obviously). I know they line up for the PLO games down here and make out pretty well a few times a month to go along with the usual shifts. I couldn't do it though. Like being on the other side of the table too much.
