By going for it there, the other team then knows what it has to do. If you think you have a great play to convert, then sure I guess. But generally not good strategy.

Relax. It wasn't that stupid. Stopping the Patriots from gaining two yards is generally more difficult than gaining two yards yourself. Plus, you get the bonus of being up by two possessions if you convert. It's not like the Patriots, being down 7, are going to go for two and win by a point in the event of a fail. Odd call by Carroll, but actually pretty savvy.
