Most try to remain anonymous. Many are 2 and 3 men shops run by programmers. Costa Rica is the most popular place for the books. Anonibet is the only one with a decent sized staff that includes multiple linesmen.

I also want to add that there have been many stiff shops so you have to be careful and only use the strong books that have been in business a while.

EVERY book has the potential to become a stiff shop. They do NOT have the financial ability to take a major hit. They also have no pull in the U.S, which is all that counts for the majority of you who do not wager in Vegas.

Bitcoin books are no different than cash books other than deposits and payout methods. Both can be insolvent but it has zero to do with the type of book. Past events are the best predictor of future events. Stay with books with no payout problems cash or bitcoin.
