To take Peyton at those odds, I'd have to believe Peyton could possibly win MVP even if SEA wins the game.
It happened once before. 1970, Colts 16 Cowboys 13, Chuck Howley LB for the Cowboys won SB MVP.

If I were you I would take Manning and Lynch.
If Seattle wins it has to be because of their running game and if Denver wins Manning is a no brainer.

Harvin at 35-1 seems pretty tempting just for something small. Only because he can affect game in special teams. Sherman at 33-1 would need a decent line of like 7 tackles, couple pass deflections, and an INT that makes a difference.
