I believe it's the snap count. I heard gruden break down a play this year where he used it and he said Peyton is just telling the offense the play is on " hut " one or whatever he uses to snap the ball. His brother uses it a lot as well at the line. Mostly used in no huddle offenses I assume but becomes a sort of ritual. He can call a snap count in the huddle and then bark out Omaha to throw off a defense. O in Omaha stands for one.

The sideline microphones in an NFL game are such that you can't count these; a television viewer might hear many of them, but unless you're standing on the sidelines, you cannot hear 100 percent. Fun idea, however.

Each NFL offense possesses its own wrinkles and complexities, but as former pros Brian Urlacher and Randy Moss explain in a Fox segment from last October, Omaha is typically shorthand for opposite, meaning Manning is either changing the play from a pass to a run or vice versa.
It could also mean Manning is switching the direction of the play — a run to the right instead of the left, for example.
