Anyone know of sites with a good database of records over all ATP players from the small to largest events? I'm mostly looking for records about who beat who and by how many sets and how dominate the set wins were.

Oncourt http://www.oncourt.info/ is the best program out there for historical data but tennis navigator is pretty good for certain types of data as well.

http://tennisexplorer.com isn't bad if you're looking for some historical average odds, just be careful with the data; there are a few matches sprinkled in where they mix up the odds. (i.e. Nadal 19.72 / Berrer 1.01 @ monte carlo in 2010)

For ATP, I would just get the data from ATP's official site, www.atptour.com.
