While all my records here in the forum are based on one unit per play, in real life, I'd say 95% of my plays are for 2.5% of my bankroll, so the specific amount varies with bankroll size. The other 5% of my plays range between 3-5% of BR.

As for amount kept online, it is very easy the have MINIMUM of $20,000 available when you are funded at 8 books like I am. A lot of guys are funded at more books than that, so it's not impossible for some people to have 50,000 or more online.
