curious about when line close in MLB

i'm just curious exactly how do i findout when a top sportsbook closes there line before game start? sometimes i see the lines closing 2 or 3 min after when the game was suppose to start?

Usually when first pitch is made. Games almost never start exactly at scheduled time so when you see lines up 2-3 minutes past scheduled start, they haven't actually started yet.
