I do it pretty much the way you stated...sometimes for O/U totals, I look at the starting pitchers before lines come out and guess what the total will be. If it's higher by a run or half a run, that makes my decision easier. Pretty easy to determine what team totals will be without the Over/Under after looking at the starter's history vs the opposing team and how they generally do away/home.
