WTF?? this is like corn beef/cabbage. Might as well boil it.

Briscuit needs to be dry rubbed and hard wood smoked. Shit ain`t easy like a Pork Butt, takes a lot of love and care.
BUT when it is done right, it beats the shit out of any $40 steak you can find.

Keep the oven at 275 max. Cook the brisket until it reaches 190*

Remove from heat and let it sit inside the foil for 30 mins

It's not about what you set the "oven" to. It's about the temp of the meat. The quicker you get the meat to that temp, the more dry it will be..

    Good luck!

gonna end up with pot roast if you listen to these guys.

how much does the fukking thing weigh? Internal temp of 190 = you gone too far.

Wrapping in foil is what is referred to as "crutching" If you have nice amount of fat on the top this isn't necessary.

DO NOT go up to 350

edit - crutching @ 190 would be going to far, but yes, pull off brisket when reaches internal temp of 190.

I wouldn't put my oven above 225, and try to keep the thing from getting hit by direct heat if possible.

My smoker is one of my most favorite purchases I ever made...

I cheated and went digital. MasterBuilt straight off amazon for 250$. Has a fukkin remote. You can decide how involved you want to be in the process or you can set it and forget it and slow cook/smoke more often than you normally would

I did the turkey for the fam this year for Thanksgiving and I'm now employed to do it every year forward

I have that exact same one. I would recommend it to anyone new to smoking. You got a recipe for your turkey?

Traeger would be way to go IMO. Prime rib, pork butt, brisket, pork loin, hell hamburgers are freaking amazing. I'm doing a smoked 3 Cheese chicken, bacon Mac and Cheese today on it. Whoever said slow and low is spot on. For instance I smoke a pork butt for around 6 hours and then throw it in a slow cooker overnight until it shreds on its own.

I went all out. 17lber in brine for 24 hours. Dry rub of mixed herbs and such. Into the smoker at 200 for first 2 hours then up to 225 for about 7.5 more and it hit 170*. Pulled it and let it sit for 45 mins.

I also sprayed it down with an oil/melted butter mix every few hours and the chips of choice were apple and maple reloaded every 2 hours.

Like I said you can pick your level of involvement and that was one turkey I didn't want to fukk up and it turned out to be the best turkey I've ever had on T-day. I spent 2 days in the prep and cook. Juicy meat, perfect smoke flavor and balance.

Be careful...whomever consumes it will be demanding you do it again for years to come. I'm on the hook now! lol

I love to cook..I'm actually a nutritionist so I'm all about "good" food and eating natural. That smoker is literally my favorite thing in the world next to my grill!!!
