    Also, for hot beverages, I make my own chai. I use clove, ginger, peppercorn, allspice, fennel, star anise, cardamom and bay.

    Simmer it off for 15 minutes, hit it with some darjeeling tea, let it brew, strain through a sieve.

If you've already read McGee there probably isnt much new on there save for some of the videos and completed dish series, but the guy really knows his shit, best cooking website I have come across and alot of interesting food science stuff.

                            Im 100% spanish blood (all 4 grandparents are from spain) but 100% mexican raised. Beans mole and chile. No, not rich but i work like a maniac and i have been doing good betting wise. So every time i win i treat myself like a king, lol. No GF now so all the money goes to me.

                                                        They all flee at the civil war on spain since none of them were catholic. One of them fought a lot before fleeing.
                                                        I like it a lot here. I would love to spend some time working over there (or anywhere else) but certaily coming back here. The food is so great, good weather....the land of the free baby!

                                                              Mole is literally the best sauces I have ever tasted, or at least in the top few. The problem is its been improperly prepared many times by alot of people and restaurants. When I shared my stew earlier, it was a mole variant, there is a reason for that. Chile's have some of the best flavor of anything I have ever tasted, its just a fact.

                                                                nice thread you guys have going on here. I would never have guessed that we'd all have so many things in common outside of sports wagering

                                                                Question for nunya and anyone else with this kind of diet... are you strictly following paleo, or just cutting the foods that have been known to cause inflammation (wheat, grains, legumes, dairy) ? are you trying to reduce glucose spikes as well?

                                                                How do you feel about relatively benign starches, like white rice?
                                                                I'm also trying to adjust my diet to reduce inflammation, but i find the jump to strict paleo a little bit difficult. Its hard to get full on a great lunch that is mostly protein, fat, and veggies without having to pay more than you would normally do when you eat out. The other option is to pack my own lunch each day but that is always a hassle.

                                                                Also, Asian food is hard to resist, and sushi rice is delicious. I do remember reading something about the vinegar in sushi rice neutralizing some of the detrimental effects of rice.. but i'm not too clear on that

                                                                  It's actually hard to find authentic Mexican food in Canada. I guess they don't make it all the way up here, or the cold just keeps them away. As a gourmand, I'm almost embarrassed to say that I have never tried mole.

                                                                      Yes, I follow very strict paleo except when I'm far away from home. It's nearly impossible to eat this way in other countries. Going out to eat, I'm sure I accidentally cheat sometimes. Like for example, last night, we had Kim Chi tacos on lettuce wraps at this place, there was definitely some sugar in the sauce.

                                                                      If you're going to eat a grain, rice is probably the least problematic, and brown rice even less problematic than that. Generally I avoid it.

                                                                      I avoid all grains, all sugars including fruit, all legumes, all soy. I try to avoid dairy, but cheat occasionally, I avoid nuts most of the time. For a few months I kicked nightshades (tomatoes, peppers, paprkia, eggplant, tomatillos, etc), but I found I couldn't live without hot peppers, so I have included those back in, those aren't a Paleo thing, but an inflamation specific thing. I don't have any blood sugar issues, myself.

                                                                      My wife has always struggled with high cholesterol, when we switched to this diet, after 3 months her cholesterol numbers were PERFECT. The doctor asked what she changed, and she told them that she started eating bacon every day. He thought she was joking.

                                                                      Yeah, this diet is very expensive. My grocery bill is probably $600 a month for two, but that's buying all grass fed meats, organic eggs, tons of fresh veggies (I eat at least one head of leafy greens a day, plus probably a pound or so of other vegetables, as well as a pound or so of meat).

                                                                      Eating cheap and fast is pretty much impossible. I've found you can get some decent choices at Chipotle, and just found out about this recently:


                                                                      I don't think its necessary to be 100% strict, any reduction of those items are going to help.
