#9905One of the things with tea, as you almost certainly already know, is that once its brewed beyond the ~3 minute point, it can become extremely bitter.
However, when dealing with spices, it can take up to 20 minutes of simmering for the aroma and flavor to develop. I'm a massive fan of chai, but the stuff you get in the bags does not work right.
What I do is I put a spice mixture on the stove, let it simmer for 20 minutes or so, remove it from the heat, throw in some darjeeling loose leaf tea, let it sit for about 3 minutes and then strain it through a sieve.
To give you an idea of the ratio I use, for, lets say, 4 or 5 cups, I'll use about 8 cloves, 1 bay leaf, 8 cardamom pods (cracked), 3 or 4 allspice pods, about 6 fennel seeds, half a star anise, and a few peppercorns.
Personally, I add quite a bit of ginger into this as well, I like the bite it gives it. A lot of recipes will call for a cinnamon stick, but I don't like that. Bring this to a boil, let it simmer for a good 20 minutes before you add your tea to it. Throw in a spoon of honey at the end of the process.
This is traditionally served with warmed whole milk, about a 2:1 ratio of tea:milk, which I do enjoy, but it can just be drank as is. I make a pitcher of this stuff every couple days, I keep it in the fridge, its awesome straight up over ice or over ice with a bit of milk as well.Comment
