Because I don't think Oklahoma is 8.5 points better here.
I'm expecting a close game either way.

Don’t want to touch spread but think OU TT of 36.5 is a good play given how bad UF’s D is and the guys they’ll be missing. I worry about UF not moving the ball as well without their big WRs, esp Pitts. That’s a huge absence for the Gators.

OU +3/+3.5 was the opener which many grabbed

a fair portion of those same people will grab FL +8.5 or better

You obviously do not know how to play a middle. Rule #1. You must have at least two books to do so. Play one against the other. It is much easier in Vegas, where the books are literally across the street.

2019 lost to LSU 63-28
2018 lost to Bama 45-34
2017 lost to Georgia 54-48
2016 win to Auburn 35-19
2015 lost to Clemson 37-17

And those losses were to Baker Mayfield and Jalen Hurts who are starting in NFL.

I don't know how good the freshman QB is this year for Oklahoma but Oklahoma has a big problem with SEC teams.

Florida (+8.5) for me as well...I posted the play earlier in my picks thread...The Gators have good and solid depth at the WR and TE positions...most of the backups got decent playing time this year!...two of the backups actually scored two td's in different games!...that goes to show how explosive this Gators offense is even when starters aren't in the game!...the key thing is the o-line is healthy and intact and MVP all-american heisman finalist QB Kyle Trask is playing...the other parts and key cogs are basically interchangeable...and the most important thing...Rule #1 of the official SBR sports gambling manifesto.."If Nash and Manster are on the same side, nail it and pound it"!...

Oklahoma has the motivation to end their bad bowl run lately. Their defense has played much better and its hard to judge Florida's mentality in this game.
