      First up is one of my favorite gnocchi recipes, make sure you get a good supplier for gnocchi, as bad gnocchi can be overly floury tasting and mushy.

      Its for a seafood and Pernod gnocchi, if you absolutely can not access or find Pernod you can use Sambuca, but I do not reccomend it. Sambuca is alot sweeter, and while it does have the anise flavor to it that you are looking for, it doesnt work nearly as well.

      Ingredients:

      Shrimp (peeled and deveined)
      Salmon (one standard sized fillet is more then enough for 3-4 portions)
      Smoked Salmon
      Any other seafood you want (squid and mussels both work here great, but its a very versatile recipe, I personally just enjoy a combination of the above 3, but you can be creative here)
      Red onion or shallot (Ideally shallot)
      Garlic (roasted)
      Tomato
      Cream
      Chicken Stock
      Pernod
      Seasoning.

      Get a saute pan nice and hot, add oil, saute your shrimp. The key to sauteeing shrimp is to have the pan almost smoking hot, and to cook each side while not disturbing them until they form a crust and stick to the pan. This way, the bits that stick to the bottom of your pan will flavor your sauce later. After you flip them, add in your salmon, you want to have the fillet of salmon cut into small chunks, maybe 3/4 inch cubes or thereabouts. The same thing applies to your salmon, you want it to kind of brown a bit and stick to the pan, when you start to flip it and move it around, its going to fall apart and shred unless each side has a nice browning to it. Also, around this time add your minced onion or shallot.

      Let this all cook off for a while, should take about a minute for the onions or shallots to start to lightly brown provided the pan is hot enough, after that add your tomatoes, 3 or so cloves of roasted garlic per portion, and smoked salmon, make sure the smoked salmon is shredded into little strips before you add it. You do not want to overcook the smoked salmon here, 20 seconds is fine, just enough to get some flavor from it on the pan.

      Add about 1oz of pernod, and flambe it. Then, add your chicken stock, and when I say add chicken stock, I mean literally a tablespoon or two, no more, if you do not have chicken stock, water is fine because it is such a small amount. The reason for this is due to the fact that Pernod is an extremely sugary liquor, so if you have it cooking off and do not add a small amount of liquid to it prior to adding cream, it can make the entire pasta extremely gooey, and you do not want that.

      Add in your heavy cream, let it reduce, throw in your cooked gnocchi (cooked them in salted water until they float to the surface, gnocchi you find is already par cooked, process should only take ~2-3 minutes, if they cook before the sauce is ready, just set them aside on a pan and oil lightly and shake them around a bit so they do not stick), season with S&P, finish by swirling in a small pad of butter if you want. Also, some shredded spinach wilted in at the very end gives it a lot of color, and some extra flavor as well.

      This is one of those rare occurances where, in my opinion, you do not want to add any parmesan whatsoever to a pasta dish, but its really your call.

      This pasta rules, the anise flavor of pernod mixes with seafood amazingly, and with gnocchi its literally a 1 pan completed dish.

        Yeah they eat a lot of fish. Just the other day I was reading the blog of someone who had been on the Paleo diet and got off, and he was saying the kind of phytates found in rice are associated with decreased risk of cardiovascular disease and cancer and such.

        I do know that some phytates are documented to be good for you. The problem with some adherents of the Paleo diet is they run with certain ideas. Like rice contains phytates, and so do nightshade plants (potatoes, chillis, tomatoes, tomatillos, eggplants, capsicum) so according to them it follows that nightshade plants should be avoided. It's possible they should be, but I find it pretty dubious.

        Of course, I haven't looked into the Paleo diet in an academic sense, haven't read any books or official documents, just the internet bloggers who want an audience.




        Not so much choice as how you're programmed. Populations (including animals) will naturally eat a grain-based diet as opposed to leafy greens, if given the choice, because the grains are more energy rich. So actually it's a natural inclination to eat grains.

        Ignoring the antinutrients like gluten though, it's impossible to argue that diet is better for you, because it leads to an improper balance of Omega 6 to Omega 3. Fresh greens contain more Omega 3, but these don't store well since the Omega 3 oxidises more rapidly.

        I can handle rice with no problem, but I'm probably feeling my best when I eat a lot of salads.

        Also, I've mentioned it before but 85% of diabetics are in the developing world because they eat predominantly starchy food. So people take the stance that calories should come from fats rather than carbs. Apparently the Mediterranean diet involves the majority of energy coming from monounsaturated fat (olive oil). At the same time, I read some information recently suggesting a link between too much saturated animal fat and cancer.

        You can only monitor your body and try to be educated, and if you have a serious ailment you have to be more rigorous. It's hard to say definitively what's optimal. Some people smoke and live to over 100.
        Well, my point never was to suggest eating this paleo diet (despite it not being paleo in the sense of the word, most likely) is stupid. It probably isn't for many people, mainly because of the reasons you posted.

        I'm a vegetarian and partly for health reasons, but not once would I actually claim to anyone eating meat is bad for your health. Because objectively looking at it, it really isn't. It might be for some, but as a whole it isn't.

        That would make me a cultist.

          Another excellent pasta recipe that is quite easy to make at home, as you can prepare the base of the sauce ahead of time:

          For the sauce base, which should be absolutely prepared a day ahead, you need the following:

          Roasted red peppers (roast your own)
          Cream cheese
          Garlic (again, ideally roasted)
          A small amout of olive oil
          And possibly some heavy cream, depending on the consistency of your finished product.

          Method is very simple, roast off your red peppers, after they are done, put them into a container, cover it with a lid or saran and let the skins steam off for 20 mins. Once thats done, remove the skins, seeds, and veins, one of the keys to this base is you also need to dry off your peppers as much as possible, the less liquid in this base the better for the finished result, and too much liquid will literally ruin the finished product.

          Then, you want to puree your red peppers with cream cheese, garlic, seasonings, and also stream into it a small amount of olive oil as the blender is in motion to bind it and for extra flavor.

          The reason I mentioned heavy cream here is due to consistency, when refridgerated you want this base to be thick, like the consistency of a thick red pepper dip or hummous. If by chance it is too thick to actually puree properly, you can add a very small amount of cream here, but be careful, this is not the sauce itself, its just the base for a sauce. The thicker the better, as long as it blends and becomes very smooth.


          For the dish itself, this sauce compliments any type of spinach and ricotta stuffed pasta extremely well, any sort of jumbo raviolli or agnolotti works perfectly here. Start cooking off your pasta of choice in salted boiling water, as for the sauce itself, you want a pan on medium-low heat, because we are using a premade base here if you turn it onto high heat the sauce will quickly break, you want a low simmer.

          Add some heavy cream into the pan and let it reduce slightly, then stir in tablespoon by tablespoon the base you made. Also, add a tablespoon of chicken stock or two for extra flavor if you wish. You want to be adding this base to semi-reduced cream, the cream will thin it out, while the base will keep the sauce nice and creamy. At the end, add your parmesan. Serve with the spinach/ricotta pasta of your choice, top with parmesan and fresh arugula for garnish.

            Also one more recipe for this morning, especially for those of you living in warmer climates where you have access to the best avocadoes on the planet, its literally a salad that can be whipped up in 5 minutes.

            The best salad for summer or a warm climate I have ever had is very simple:

            Arugula,
            Spinach,
            Sliced avocado,
            Sliced watermelon,
            And interestingly enough, blueberries as garnish.

            Dress it with a cirtus dressing, or failing that, a sherry vinaigrette works.

            Literally 5 minutes, shockingly delicious.

                                            Every year for my daughter's birthday I bake her a themed cake. My decorating style isn't great, but it's appreciated. In previous years I have done pokemon, pacman, katamari themed cakes. This year I'm going to do one based on Georges Mellies' Trip to the Moon.

                                            Something like:



                                            My plan was to cover the cake in fondant, although I've never used it before. Any tips or recipes there? I'm also planning having the rocket be a separate piece of cake, sticking out from the surface, was planning on holding it in place with wooden skewers. Any better ideas?

                                                          Humorously, the most famous cake I made for her was this crazy 4 tiered dark chocolate cake covered in a dark chocolate ganache, it was beautiful, sparkling candles, her eyes lit up when she saw it. I spent all the time on decorating and making it look perfect, I somehow forgot to add the sugar to the frosting. It was the most bitter horrible thing anyone ever ate.
