You have a point there. But all their previous meetings were in calendar-filler tournaments. Today's meeting belongs on a different pedestal.
Given that Pliskova has taken at least a set in their previous 5 meetings makes Pliskova +1.5 sets look like free money. But sportsbooks make money from variance and from the inability of gamblers to cap each game uniquely. In a non-slam event, I would be on Pliskova. But today's meeting is unique. So expect a result uniquely different from that of their last 5 meetings. This is Kerber's third grandslam finals appearance this year. She has everything going for her in this game.
