Loin center cut roast (not tenderloin), I think it's going to do fine.

Nice big flab of fat on the top of that bad boy.

Made a rub with all kinds of shit from the cupboard, including Pappy's and lemon pepper.

decided against bbq sauce, just not good enough.

Why did they put onions on only half of the McRib?

Sadly no, I do like the bone in, but we went for space this time, fit more meat in there.

have two more in the freezer, might do one with root beer next time and shred it up.

                        Always looking for ideas.

Some guys like to stuff sausage in the loins

Inspired by your pork adventures and the McRib season, I'll think I'll pick up a couple racks today to throw on the weber charcoal grill tomorrow.

Turned out fine. 8/10 on my personal scale. I was going to post this pic with a sandwich pic once I turned it into a sandwich, but the ribs never made it that far and all was forgotten. It wouldn't have been an authentic McRib style sandwich anyway as I don't think the McRib actually has any rib in it. Maybe I'll pick up some tripe and pig anus this week and try to make the real deal.

I got about 18 pounds of brisket in the fridge corning for a week now. I'm going to turn it into pastrami in a few days.
