The Linq, Harrah's, Monte Carlo all fit your bill. Usually moderately priced, close enough to Bellagio, Caesars Palace, Venetian and Aria. All those places have good books and you have your variety of CG, MGM/Mirage, and Caesars lines to compare. Use www.vegasinsider.com click on the sport you want and click the Vegas Odds tab. You'd be surprised that even for the NFL Playoffs and the NCAAF Championship they were hanging different spreads and ML's for each book.
As far as poker goes, I heard the Linq renovated their poker room, but it is still small. You can hit that or Planet Hollywood to beat up the donkey tourists. Or, if you are looking bigger/better, you have Aria, Bellagio, Caesars, and Venetian right there. I stayed at Aria last weekend and the poker room looked full every time I passed it.
