When i cash out with bitcoin do they know the name thats attached to the wallet? I want to cash out $500 to a different wallet thats not mine. If i cant ill just transfer it over after it hits mine.

No, they cannot match the address you give to a specific wallet or person.
You can ask for the payout to go to any wallet you like.
