Seems like a no brainer to take the superior team, grab the -2.5 handicap and watch them win 10-2 on corners even though the game ends 0:0. But I never tried so I don't know how it actually goes.

Its like anything. The handicap is there to even it out.
2 teams looked at and the handicap given, its not like they forget Man city or Barca are the superior team just because its a corner market.
