    that's right gentlemen. Every man and woman should have at least one well-maintained cast iron skillet. In fact, if you have an aluminum skillet or aluminum alloy go ahead and toss that poison out. Same with your toothpaste and deodorant.


    You only need to season them in the oven every once in a while. For a quicker season just heat the skillet on the stove until it is smoking, put some vegetable oil or lard in it then spread it around and wipe out any extra. Let the skillet cool down then when you reheat to cook it will be nearly as smooth as a teflon.

    brooks said the sauce is "made from the pan." Whether it's a pan or skillet, the sauce is made IN the pan/skillet, not FROM it. It the sauce was made FROM the skillet, it would be an iron sauce. It was a grammar lesson. Sheesh.
