I'm going to try this Harry.

Questions: Butter the bird then throw lime, orange juice, and wine over the buttered bird?

Why cook at 350 for an hour first?

Thanks much. I have 2 turkeys brined and ready to go. I'm going to use this on one of them.

Yes butter bird pour liquids over bird Add spices you really can't over spice it except maybe salt ..but all this gets used as the gravy in the end yes 350 1st hour then 325 if it's a 20 lb bird about 8 hours and baste every hour

Good stuff Harry. I'm excited. I've got my Traeger grill all ready, the birds are brined. About to stuff them and set to smoke for a few hours first.

With the Tritip I filet the middle and add cooked bacon Mozzeralla cheese Green red bell peppers jalapeño and garlic and layer it packing it in then I sew up the Filet with turkey Twine and a metal skewer. BBQ for 45 mins at 350-400 once cheese starts oozing out I take off BBQ and let rest 10 mins then slice the meat is like prime rib the center is unreal cheasy pepper garlic greatness ..hahhaha

Harry - I got a 16 pound bird done up Cuban style. It's been smoking on the grill for a few hours, should be done in the morning. It smells good raw right now.

I got another 18 pound bird, Cajun style. I also have a ham, smoked sausages and a dozen Cornish hens. Half I'm doing an Asian teriyaki style and the others straight Texas BBQ. I also have a large brisket that I've had on the Sous Vide the last 2.5 days. I'll take it out in the morning and put it on the grill for a few hours before time to eat. Man, once you go Sous Vide on brisket and steaks, you really can't go back.
