http://wizardofodds.com has a good detailed list of house edge percentages on games of all the major software providers. Ofcourse with baccarat the difference will be minimal. I would look out for a casino with the best bonus, decent playthtough rquirements and baccarat allowed in the wagering requirements. Making sure the casino is reliable is the most important thing though.

Most casinos use the same RNG type whether you play for fun or for real although Intercasino notes that the number is being generated from your pc in fun mode, as opposed to their server in real mode. Main difference is you don't care about losing when you play for fun since you have unlimited funds ;-)

All the major software providers RNG's are tested by independent auditors, so in that sense they should be safe. I guess in the end its up to what games you like to play and what is the software you prefer.
