Italian dressing in fact dries a steak out, it pulls any form of fat out of the meat. That is why sweeps steak is all curled up and pulling. Fat is needed to make a good steak. Its called marbleization. To add to this, the key to a good steak is cooking fast, always on high heat, high, high, heat. penetrate it.. ill make a video and break this shit down.
