    Try a turkey breast some time. I brine it overnight in water/buttermilk brine. I de-bone it before smoking and put a rub under the skin. Moistest turkey you will ever taste.

    Damn. Sorry man. Brisket can be tricky. Better of in a slow cooker or smoker next time.

    go to Boston Market 10x better and cooked much better

    Good advice from posters. I just messed it up. the juice from the meat got too hot and cooked the Brisket too fast.

    Good thing is I will be saving up for a smoker now.

    Is it burned or just dry? If it's just dry you can make jerky out of it.
